The Bar Hemingway is a Parisian institution — any night can play host to writers, models and designers. The gatekeeper ensuring patrons have a wonderful evening is Colin Peter Field. His anointment as the best barman in the world, by Forbes and Travel + Leisure magazines, is hardly surprising given his coterie includes Kate Moss, who wrote the preface for his book, “Le Ritz Paris – Une Histoire de Cocktails” (Editions de la Martinière), which was published in October. The model and muse favors the French 76 (a seductive concoction of vodka, lemon juice and sugar mixed with Champagne) whenever she is in town. With Paris fashion week in full swing, Field revealed where to unwind after the shows and where to get the best takeout. And for those not across the pond, he shared one of his favorite recipes for at-home imbibing. Santé!

1 teaspoon of sugar
2 sprigs fresh mint
3/10 clarified apple juice
5/10 Champagne
1 teaspoon of sugar

Add the Calvados, sugar, mint and apple juice to a glass and stir. Add the Champagne and serve.
